Back to School – What’s for Breakfast?

Back to school – back to school!

Yes, I sang that in my best Billy Madison voice. Here we are back to school again.  I feel like summer moves even faster as an adult than it did when I was a kid. While I no longer have kids at home to get kids ready for school, I’m sure everyone can still use a good breakfast smoothie recipe.

Try out these options and add your favorite protein powder.
#1 – Training Wheels

1 tbsp. vanilla extract

4 tbsp. almond butter

1 C unsweetened coconut milk

1 scoop plant-based protein powder

Directions:  Blend all ingredients until smooth.

 

#2 – The Trailblazer 

1/4 C frozen wild blueberries

1/4 C frozen cranberries

1/2 lemon (juiced)

1 tbsp. almond butter

1 tbsp. pumpkin, flax, or chia seeds

¼ C walnuts

1/4 avocado

1/2 tbsp. coconut butter

1/2 C unsweetened almond milk

1/2 C water

1 scoop plant-based protein powder

Directions:  Combine all the ingredients in a blender. Frozen fruit is used instead of ice.  If shake is too thick, add water until desired consistency is achieved.

#3 – The Professional

 Directions – Read Carefully!

  1. Choose one fruit and two vegetables and place into a juicer. You don’t have to juice, you can blend, but it can be too “pulpy” for some people.
  2. Choose one fat booster (avocado, almond butter, or coconut oil) and one probiotic base (yogurt, kefir, or kombucha).
  3. 1 Scoop of your favorite protein powder.
  4. Blend all the ingredients and enjoy!

1 C blueberries

1 C frozen mixed berries

1/2 C mangos

1 medium banana

1 large apple

1 large beet

1 C spinach

1 C Swiss chard

1 C arugula

½ C sliced cucumber

1 C kale

½ avocado

1 tbsp. almond butter

1 tbsp. coconut oil

½ C Greek yogurt + 1 cup water

½ C kefir + 1/2 cup water

1 cup kombucha + 1 cup water

1 ½ C coconut water

1 tbsp. lemon juice

1/4 tsp. cayenne pepper

1 tbsp. flax seeds

1 Scoop plant-based protein powder

Directions: Combine all ingredients in a blender. Mix until smooth and enjoy.
